Still, I guess she enjoys playing the piano to the max (in her own way). I'm only speculating here but moving like that would overstimulate your sensors (ears for spatial audio, a bit of an airflow to the skin, muscular activity...).
Skipping all that, her playing is really moving, she's really living it 😄
p.s. : I also tend to move my head from left to right when I'm playing the guitar and in the zone... (not to the same extent though)
